Ingredients

• White shrimp (peeled and deveined) – 600g
• Ginger – 15g, minced
• Garlic – 20g, minced
• Red chili – 1, sliced
• Scallions – 2, chopped
• Cilantro – a small handful, finely chopped
• Beer – 120ml
• White pepper – ½ tsp
• Sea salt – 1 tsp
• Rice bran oil – 1 tbsp

This Beer-Braised Shrimp recipe brings together the malty richness of beer and the sweet brininess of shrimp in one sizzling skillet. Aromatics like ginger, garlic, and chili kick up the flavor, while a quick braise in beer creates a glossy, savory sauce. It’s a perfect dish for summer gatherings or cozy dinners—whether served with rice or enjoyed as a flavorful appetizer.

Instructions

  1. Prep the shrimp and aromatics:

    Rinse and devein the shrimp, removing the sharp tips and whiskers. Mince the garlic and ginger, slice the chili, chop the scallions, and finely mince the cilantro.

  2. Heat the skillet:

    Preheat a Flambo Skillet over medium heat until water droplets glide smoothly. Lower the heat and add 1 tbsp rice bran oil. Once you see ripples forming (oil pattern), you’re ready to cook.

  3. Sauté the aromatics:

    Add the minced ginger, garlic, and chili to the pan. Stir-fry until fragrant.

  4. Cook the shrimp:

    Toss in the shrimp and stir-fry briefly until they begin to turn pink. Pour in the beer and season with salt and white pepper. Cover the skillet and let it braise for 1–2 minutes.

  5. Finish and serve:

    Uncover, add scallions and cilantro, and stir to coat the shrimp with the sauce. Once the liquid has slightly reduced, remove from heat and serve immediately.
