Ingredients

• 7 oz wild-caught squid (cleaned and cut into strips)
• ¼ oz dried kombu (rehydrated and sliced into thin strips)
• 1 tbsp soy sauce
• 1 tbsp mirin
• 1 tbsp sake
• 1 tbsp butter
• Shichimi togarashi (Japanese seven-spice), to taste
• Mayonnaise, to taste

This Butter Teriyaki Stir-Fried Squid is a simple yet flavorful dish that brings together tender squid, umami-rich kombu, and a sweet-savory teriyaki sauce. The combination of butter and soy sauce creates a rich, aromatic glaze that perfectly coats each bite. Serve it over rice or enjoy it as a delicious appetizer with a cold beer!

1. Prepare the kombu:

Soak the dried kombu in water until softened. Drain and cut into thin strips.

2. Clean the squid:

If using whole squid, remove the internal cartilage, eyes, beak, and innards.

Slice the cleaned squid into strips and pat dry with a paper towel.

3. Stir-fry the squid:

Heat a Flambo Skillet over medium heat. Add butter and let it melt.

Add the squid and stir-fry until it turns white and opaque.

4. Add the kombu & sauce:

Toss in the sliced kombu, then add soy sauce, sake, and mirin.

Stir-fry until the liquid is slightly reduced and everything is coated in a rich, glossy sauce.

5. Finish & serve:

Transfer to a serving plate, drizzle with mayonnaise, and sprinkle with shichimi togarashi for a spicy kick.

Enjoy hot with steamed rice or as a tasty appetizer!
