Miso Zucchini and Pork Stir-Fry

Zucchini isn’t just for roasting—it’s delicious stir-fried too! This vibrant dish features juicy strips of pork, sweet zucchini, and a savory miso sauce that keeps every bite irresistible. Light yet flavorful, it’s a perfect veggie-forward stir-fry to enjoy any day of the week.

Instructions

  1. Prep the ingredients:

    • Julienne the carrot

    • Slice garlic into thin slices

    • Cut scallions into 2-inch segments

    • Slice chili into thin rings and set everything aside

  2. Salt the zucchini:

    • Cut zucchini into thick matchsticks

    • Place in a bowl and toss with ½ tsp salt

    • Let sit to draw out excess moisture

  3. Marinate the pork:

    • Slice pork into thin strips

    • Mix with a pinch of salt, 3g sugar, white pepper, and 10ml rice wine

    • Add a slurry of 10g potato starch + 10ml water and massage until absorbed

    • Finish with a drizzle of sesame oil and mix well

    • Refrigerate if preparing in advance

  4. Make the miso sauce:

    • In a small bowl, mix together:

     • 20g miso

     • 1 tbsp soy sauce

     • 2 tbsp rice wine

  5. Stir-fry everything:

    • Heat your Flambo Skillet over medium heat until water beads dance on the surface

    • Add sunflower oil and heat until oil patterns appear, then reduce to low heat

    • Add garlic and carrot; stir-fry until fragrant

    • Add pork strips; sear until lightly browned

    • Add zucchini and stir-fry quickly until evenly mixed

    • Pour in the miso sauce and chili rings

    • Stir-fry until everything is well coated and sauce slightly reduces

    • Toss in scallion segments, mix briefly, and serve hot
