Soy-Glazed Mushroom & Chicken Wings

Ingredients

• 400g chicken wings
• 200g mushrooms
• 15g old ginger, sliced
• 1 fresh chili, sliced diagonally
• 1–2 scallions, cut into segments
• 3 tbsp soy sauce
• 1 tbsp oyster sauce
• 1 tbsp sugar
• 80ml water
• 1 tbsp sunflower oil

Instructions

  1. Prep the ingredients:

    • Cut chicken mid-wings in half at the joint

    • Slice ginger

    • Slice chili diagonally

    • Cut scallions into segments

    • Depending on size, either halve or leave mushrooms whole

  2. Sear the aromatics and chicken:

    • Preheat your Flambo Skillet until water droplets glide across the surface

    • Add sunflower oil and heat until ripples appear

    • Reduce to low heat and add sliced ginger, stir gently until fragrant

    • Add chicken wings, increase to medium heat, and sear until browned

  3. Cook mushrooms and braise:

    • Add mushrooms to the skillet and stir-fry with the chicken

    • Pour in sauce mixture (soy sauce, oyster sauce, sugar, water)

    • Stir well to coat everything evenly

    • Cover with lid, reduce to low heat, and simmer for 5–10 minutes

  4. Finish and serve:

    • Remove lid, add scallions and chili

    • Stir-fry until evenly mixed

    • Serve hot with rice
